Ingredients
2 cups mixed greens
½ cup cucumber
½ cup baby tomatoes
½ cup chickpeas, drained and rinsed
¼ cup walnuts
½ Tbsp extra-virgin olive oil
½-1 Tbsp red wine vinegar
Salt and pepper to taste
Preparation
Combine greens through walnuts in a bowl.
Drizzle with vinegar and oil.
Toss to combine, and season with salt and pepper.
