Ingredients

  • 2 cups mixed greens 

  • ½ cup cucumber

  • ½ cup baby tomatoes

  • ½ cup chickpeas, drained and rinsed

  • ¼ cup walnuts 

  • ½ Tbsp extra-virgin olive oil

  • ½-1 Tbsp red wine vinegar

  • Salt and pepper to taste

Preparation

  1. Combine greens through walnuts in a bowl. 

  2. Drizzle with vinegar and oil. 

  3. Toss to combine, and season with salt and pepper.
