REINDEER SALAD

Serves 4
Prep Time 10 minutes

This is Rudolph’s favorite salad. I bet it will be yours, too!

 INGREDIENTS

         4 cups Spinach, loosely packed, cut into thick ribbons

         ½ cup Walnuts, toasted and chopped, (or pepitas)

         1 Apple, large diced

¼ cup Pomegranate Seeds, (or 1/2 cup Blueberries)

1 Tbsp Asiago Cheese, shredded

         Vinaigrette Dressing:

                  Whisk together:

                           ½ Tbsp. Champagne Vinegar

                           ½ Tbsp. Apple Cider Vinegar

                           ½ Tbsp. Honey

                           1 Tbsp. Olive Oil

        

INSTRUCTIONS:

1.     Toss Spinach, Asiago, Apple, and Pom Seeds together.

2.    Whisk together ingredients to make Vinaigrette.

3.    Just before serving, add 1- 2 Tablespoons vinaigrette to salad and toss. Add more to taste, and refrigerate rest of dressing.
